Gary Wollerman possesses extensive experience in all facets of the restaurant industry, having worked his way up from bartender to Senior Vice President with Houlihan’s restaurant group. In his 18 years with the company, Gary focused on the guest dining experience in the 35 restaurants under his supervision.
Seeking a new challenge, Gary accepted a position as the Vice President and Chief Operating Officer of Ruth’s Chris Steakhouse in 1995. His implementation of a revolutionary operation system in New Orleans, New York, and Beverly Hills significantly enhanced the Ruth’s Chris dining experience. It was during his tenure at Ruth’s Chris when Gary met then Director of Culinary Operations, Tenney Flynn. Their collaboration to fuel a new culinary endeavor created GW Fins, which opened its doors in New Orleans on March 9, 2001.
Steadfast in his commitment to the overall guest experience, Gary works tirelessly to “create raving fans” out of each person that walks into the restaurant.
“I view each situation as an opportunity to transform that person, whether they are a staff member, dining guest, vendor, or our banker, into a fan who will emphatically tell others to dine at GW Fins,” Gary says.
Gary is both co-owner and general manager of GW Fins, where he oversees staff education, marketing, sales and concept development. This labor of love has enabled GW Fins to garner accolades from national and local publications such as Esquire, New Orleans Magazine, Food & Wine, Southern Living and a 4-bean rating from The Times-Picayune.
